Strawberry Tarts 草莓塔

I seldom make tarts or pie, not sure why, i always feel too many works to prepare a tart or pie . Anyway, when i see nice tart or pie pan, i still tempted to buy some ^_^. Since i still have some fresh strawberry, so time to make Strawberry tarts as i can use the tart pans that bought long time ago.

Bacalhau com Natas (Salted Cod fish with Cream) 葡式马介休薯容


Macau was under Portuguese rule until 1999, then transferred to China. During our visit to Macau, we have a chance to taste Portuguese dishes or Fusion dish (Macanese and Cantonese) . The first time I cooked Macau food was Macanese Minchi 澳門式免治 , it was a good dish. This time, I got to know a new ingredient that widely use in Portuguese dishes i.e Bacalhau or salted cod fish or Chinese called as 马介休.

I have to clear the store-bought puff pastry and dairy whipping cream before they expired. So I try made these easy version of Portuguese tarts instead of the earlier version. Using store-bought puff pastry to make the case, it was a breeze and so quick can enjoy this yummy Portuguese egg tarts at home.

Easy Strawberry Mille-feuille a.k.a Napoleon 拿破仑千层草莓酥

We just came back from a short trip to Cameron Highlands. I bought some very fresh and large strawberries. I immediate thought of this French pastry Mille-feuille or Napoleon which made up using three layers of puff pastry, and alternating with two layers of pastry cream. I made an easy version, using store-bought puff pastry sheet, sandwich with whipping cream that flavoured with strawberry flavours and fresh strawberry from Cameron highlands.

Puff Pastry with Homemade Blueberries jam 蓝莓果醬酥


I bought a pack of puff pastry few months back, but now I totally forgot what actually I was planning to make at that time. Before the pastry getting expired, I have to quickly use it. First I tried this puff pastry with homemade blueberries jam. And today I use it to make pork and fennel puff rolls (picture posted in my Instagram account).

Pork and fennel puff rolls


When i posted up the chicken and bacon puff rolls, few blogger friends suggested me to try this Pork and fennel pull rolls. They said this pork roll is good and tempted me to make this pork roll at home. This was 1st time I tried pork roll as we could not easily find pork related bakery items selling in the bakery shop here due to Halal issue..I would say this pork roll taste is as good as chicken roll.

Chicken and Bacon puff rolls



Yesterday i was reading through the Bourke street bakery book-the ultimate baking companion ( Christmas gift from my two lovely blogger friends Jane and Helena) and try to understand the tedious steps on how to make my own bread starter, also admiring the beautiful croissant in the book. After i spent quite some time and i still don't quite understand how to make the starter ^_^, so i gave it up and continue flipping thru the book and this chicken and bacon rolls was caught my attention. So i decided to make this for today lunch.

I have to quickly update what i learnt in Academy of Pastry Arts Malaysia in Day 2 since my memory still fresh..On the 2nd day, Chef Lejuene taught us on how to make the basic Sweet Pastry and Linzer dough, and few type of fillings-Ganache moelleuse, Almond cream, Lemon cream and Meringue Italienne.

I just learnt that a Shepherd’s Pie is made from ground mutton/lamb where a Cottage Pie is made of ground beef. So today I preparing a British classic-Cottage pie but not a Shepherd's pie.

Durian cream puff (with recipe)

Wanted to bake durian cream puff long time ago, after saw Cooking Crave 's nice strawberry puff. It encourage me to give a try immediately, but waited for her recipe for 1 week, she still too busy and no time to post it, no choice, I use back my old recipe from Nancy Mommy. If you are durian lover, you will love this, the durian cream tasted like durian ice cream.



Recipe to share
100g butter
250ml water
a pinch of salt
150g flour (all purpose)
1/2tsp vanilla essence
1/4tsp baking powder
1tbsp sugar
2-3 eggs (I followed to original recipe which use 4eggs, but the batter became too watery, no choice I added more flour, so you need to adjust the eggs accordingly)
CreamDurian meat 300g( blend )
Whipping cream 植物奶油 200g ( beat till creamy)
* mix both together and chill in the fridge
1. Mix flour, baking powder,salt and sugar, set aside.
2. Heat butter in a pot (medium heat), once butter melted, add in water, mix well.
3. Add in flour mixture (no.1), vanilla, qucikly mix well ( about few seconds), turn off the heat.
4. Continue stirring flour until the dough mix well ( once you see shinning surface).
5. Transfer the dough to a mixer, set aside to let it cool down.
6. Once it cool down (dont need completely cool) , mix in the egg, and beat the dough and eggs till mix well, less than 5mins.(the dough texture must not too soft or too hard, something like biscuit dough which you can easily shape it)
7. Place the dough in a pastry bag fitted with a tip. Pipe quarter-sized puffs about 1 inch apart on a baking pan.
8. Bake at pre-heat oven at 180C (original recipe 200c, too hot) for 25mins or until golden brown.
9. Cut the puff and fill in durian cream (store in fridge when not use), and enjoy it...

Mixed Fruits Tart and Blueberries Cheese Tart

This was my 1st time baking tart, I adapted the recipes from Felvinc (refer to blueberries filling ) and Mia (refer to pastry) 's blog, but I made little changes on it.

"Blueberries cheese tart"

Recipe to share

-->
Pastry (can make 30 tarts-small size)
-Plain flour 150g
-Self Raising flour 50g
-Unsalted butter 95g (chilled, cut into small pieces)
-Caster sugar 2g
-Salt 1/2tsp
-Chilled water (1tbsp)
-Egg (half), beaten lightly with Chilled water
Steps:-
  1. Mix both flours and salt in a mixing bowl. Add butter and rub into flour.
  2. Add in sugar, then follow by egg chilled water, mix well to form dough (do not over mix).
  3. Wrap in plastic wrap, and chill for 30-60mins.
  4. Roll the pastry and press into tart’s mould.
  5. Bake at pre-heat oven at 180c for 13-15mins.
  6. Once done, cool the tart before put in the filling.

Blueberries Filling
-Cream cheese 125g
-Caster sugar 20g
-Egg yolk 1
-Lemon juice 1/2tsp
-Whipping cream 60g
-Blueberries jam


Steps:-
  1. Beat cream cheese and sugar until mix well and smooth
  2. Add in egg yolk and lemon juices, mix well
  3. Last add in whipping cream and mix well

Blueberries tart steps:-
  1. Spoon the cheese filling in the tart, and follow by blueberries jam
  2. Bake at pre-heat oven for 10mins.

Mixed fruits tart steps:-
  1. Mix instant custard powder and water to form paste
  2. Mix instant Jelly powder and water to form paste
  3. Spoon the custard paste in the tart
  4. Then put the desired fruits (cut into small pieces)
  5. Spoon the jelly paste on top of the fruits, and served (do not need to bake)


Other topic- recently I specially bought a rack (from Ikea) and just to keep all my bakery items and dry ingrediants, this rack is convenient and easy to be accessed.

Cream, for cream puff

After I successfully baking cream puff, my kids keep asking me to bake more for them nowadays. And I just found a new easy way (Taukeh Soh of a bakery shop taught me) to prepare the cream for the cream puff. Just buy a packet of instant custard, mix 50gm of instant custard powder and 100ml of drinking water, stir well and serve. Simple and cheap.

Thanks Nancy for sharing the cream puff recipe http://nancymummy.blogspot.com/2008/11/cream-puff.html, this is my long waiting recipe. I immediate prepare it and result turn really good, can be compete with outside shop selling.
Who interest to bake this, please go to Nancy mummy blog, very clear guides. But remember to add some sugar(thought Nancy forgot to write that), I bake only half portion so I put in 30gm sugar.

Curry Puff

In this market downturn, home cooking will save you money and you can enjoy a better quality of foods. Just realized it is so easy to prepare homemade curry puff. Use the ready made "Kawan" puff pastry and wrap with curry potato and chicken, bake for 25-30 mins at 180C. Similar like you bought from outside bakery shops. You can even put other type of ingrediants such as sardine, apple & etc
