I'm so happy to find out this simple French bread recipe. Love the crunchy and crispy crust (while hot) , soft and chewy inside..
I can use the same recipe make into my favourite baguette next time which need to make longer in shape...The texture and taste of this French bread is very close to Delifrance's French bread, which slightly salty in taste..
I also use the new French bread pan that i bought from "taobao online"...
I'm not sure if we use the normal baking pan instead French bread pan will have difference result or not, need to find out this answer one day..
Easy French Bread
(recipe source: adapted from dailydelicious )
300g bread flour / high protein flour
1tsp honey
1 and 1/2tsp instant yeast
1tbsp Olive oil
200ml water
1 and 1/2tsp coarse sea salt
Some yellow cornmeal, for dusting and sprinkle over the pan
2 cups boiling water, for baking
Method
1. Mix olive oil, honey and water together in a bowl.
2. Put flour, instant yeast and salt in the mixing bowl, whisk to combine.
3. Slowly add in water mixture (No 1) into flour mixture(No 2), knead till elastic dough. Keep aside to rise until double size.
4. Place a baking paper or silicone baking mat over a sheet pan, or use a French bread pan (I use this one), sprinkle with the yellow cornmeal.
5. Divide the dough into 3 pieces.
6. Roll into balls and let the dough rest for 10 minutes.
7. Press the ball lightly and shape into a long oval, do the same with another ball.( I dusting the worktop with yellow cornmeal too)
8. Use the side of your hand press the center of the dough, and roll again (do it 2-3 times until you get a desired length )
9. Place the shaped dough over a prepared pan.
10. Let the dough rise until almost double in size, about 30 minutes.
11. Preheat the oven 220°C and place a roasting pan in the lowest shelf of the oven.
12. With a very sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across top of each loaf. Put the bread into the oven and pour the boiling water into the roasting pan, bake for 10 minutes. Remove from pan and cool on wire rack.
I made this bread into garlic bread and serve with creamy mushroom soup, they are very good!
Ya, can anyone tell me how to frozen the unbake French bread? I planning to make more of this bread and store in the freezer for later consume. Thanks!

Sonia , that looks absolutely beautiful ! That french bread's way better looking than the one you can see in some high-end bakery ;) You can wrap it up in foil/plastic and put it in ziploc bag and freeze it. Few years ago , I saw some frozen Delifrance french bread at our local supermarket and my friend bought some and reheated it , it taste good , she said , so I guess it's ok to freeze yours ;D

sonia dear..this bread is absolutely tempting..but allow me to ask..when baking this bread i notice that u put 2 bowls of water in the oven..why? what's the secret? definitely will give a try!

The link that you have where you bought the bread pan - taobao online... the pan showed on their web is for 4 loafs whereas yours is for 3... I can't read chinese... the price listed.. what currency is that and what's the size of your pan ?!
I don't have such a big oven as yours and I don't want to buy and end up too big !

Much easier for me to buy my baguettes from the Artisan Boulangerie down the Road !! I do make bread quite often but I cannot compete with the experts here :) Diane

sonia, i also made some baguettes and you post it up first.hehe..bw, what difference does that french pan give compared to the normal pan? is it for crustier loaves? i'm not too sure about the question you asked abt the freezing part but if i want to freeze them, i guess i'll just bake them and freeze them later.
well done! I made 3 rolls yesterday. One for my husband for lunch, And one for my 2kids for lunch as well. The last one for our breakfast this morning. This recipe is very simple compare to mine. Must try out as soon as possible.

Gosh, Sonia. Your loaves look perfect! I really have to get myself those pans. I'd made mine without those to hold it into shape and they turned out slightly out of shape and senget. The insides and taste was good tho. Will try out this recipe as well. Bread recipes are always good for me :D

i make one of this why is it yours was way bigger than mine,btw i use warm water is it because of that? and i dont have that kind of pan..pls help i followed the recipe it looks like baguette from inside to out but its so small when it came out. of oven i also followed the proofing time..

Your bread looks absolutely fabulous! My whole family is a big fan of baguette and naturally I would like to learn how to make it. Today I finally tried your recipe but alas, I did not succeed. The outcome was that my bread was "too compact". Not as fluffy and soft as your picture. Do you have any idea why?? I used my stand mixer to knead about 10 mins. I did the first proofing for 1 hr and for the rest, I follow exactly yours. I don't have a baguette pan and thus used a regular baking pan, putting a baking sheet sprinkle with cornmeal flour. After baking for 10 mins, I realised the bottom part of the bread is not cooked at all. I have to turn over to bake another 3-4 mins. Is it because I knead too Long? Or I proof too short? The temperature of the place I was proofing was about 31 degree - my laundry area. :p hope you can help when you are available. Thank you!
