Chinese sausages fried rice

Every Chinese mother sure know how to cook this easy, simple and yummy fried rice. When i run out of idea what to cook for dinner, I will just fried this rice and serve with a cup of hot coffee, simply yum yum..

Chinese sausages..




Chinese sausages fried rice
* serves 5-6 pax
(printable recipe)

Ingredients
4 cups of rice, (cooked and cooled, prefer overnight rice)
400g fresh shrimps, roughly chopped
4 Chinese sausages, chopped
3 eggs, lightly beaten
1 whole garlic, chopped
4 stalks of spring onion, chopped
6-8 tbsp of cooking oil or more (easy to stir and glaze the rice)

Seasonings
1 and ½ tsp salt or to taste
A dash of white pepper powder
1 tbsp of light soy sauce
1tsp of Chinese wine (optional)

Method
1. Heat oil in a wok over high flame, add in chopped Chinese sausages, stir fry till fragrant and brown.
2. Add garlic, quickly stir fry. Add in chopped shrimps and stir fry till turn pale.
3. Push sausage and shrimps mixture to the side of the wok, add in egg and scramble the egg.
4. Put in the rice, toss well to combine.
5. Add salt and pepper, pour light soy sauce and Chinese wine from the side of the wok (this way will be more fragrant).
6. Keep stirring until the rice starts to “jump”. Combine all the ingredients together and fry until heated through.
7. Dish out, sprinkle with chopped spring onion, serve hot.

Hi, I like fried rice too! I know every mum know how to cook this but a perfect fried rice might need some technique. Thanks for sharing your recipe. I must follow your steps to get my fried rice right! Cheers!

I haven't tried Chinese sausages at home, but love to cook if I can get hold of them in a Japanese supermarket. Yum!

Chinese sausage with fried rice has to be one of the trusted fried rice classics, so I totally agree with you, every Chinese mum who cooks would have this as a contingency dish!

Once, a chef from Hong Kong told me that good fried rice is the rice can "dance on the wok" while frying. So, yours must be super good since you added Chinese wine.

Hi Sonia, nice choice! I always fry this when I don't have anymore idea for dinner..haha! Other than this "lap cheong" I'd sometimes used luncheon meat. That's one of my favourite..;p

I love fried rice. A charming Chinese woman taught me how to make it years ago. But my recipe is quite simple compared to yours. I love the idea of Chinese sausage. Wonder if I can find it around here?

Oh, it's so long since I last ate Chinese sausages. Must be ore than 10 years. I remember it's really delicious to make fried rice. My mom loves it steamed with rice.

Hi,Sonia,
I learnt this trick from one of HK cooking program, you can add one or two egg yolks to the rice and stir fry it till the rice is evenly coated with the egg yolk, this will give you a yellowish colour and more fragrant fried rice.Do give a try.

Just look at the ingredients you have and I know this must be a sedap fried rice. By the way , I never know that we can add chinese wine in fried rice , it must be 另有一番风味 !

I love the inclusion of chinese sausages. Adds a lot of flavour to the dish. Something about eating fried rice in a bowl just so comforting.
