Homemade fluffy Pancake with maple syrup

I just realized that pancake serve with maple syrup is very nice and love the fragrant smell from maple syrup...This morning we just having this yummy pancake at our favourite spot in our house, a wooden decking oversee our little garden...what a lovely morning..

















simple ingredients but great result, the texture is very fluffy...

Homemade fluffy Pancake with maple syrup
(recipe source: by Sonia aka Nasi Lemak Lover)

150g Self raising flour
50g Sugar
1/4 tsp salt
110ml Fresh milk
1 egg
1tbsp Corn oil

Maple syrup

Method
1. Mix flour, sugar and salt in a mixing bowl.
2. Add in egg, milk and corn oil, use a hand whisk to stir well.
3. Spoon batter onto a non-stick pan (without oil) to pan fry until golden brown on both sides.
4. Serve hot with maple syrup

hi sonia,
your pancake is really fluffy and tasty.. if i'm using all purpose flour how much of baking powder should i use...?? how many did u made with this weight of flour? and one last question, do i need to let the batter wait a while before start to fry it?

Jane, I think 1/2tsp baking powder should be enough. I forgot to count, let me think, I think about 14pcs but this also depend on the size of pancake. If time allow, you can let it rest for 15mins. But this time I did not wait and straight away fry it , the end result still good .

Sonia, Mary being so helpful! Yes, your pancake looks really well risen. I think the smaller the size the better it rises. I've been making pancakes very often but can't bother to make a nice sizing. Just fill in the pan and quickly finish whatever batter left. hahaha.... Normally, we had it for brunch not breakfast. I don't like cooking early in the morning. Just take coffee and crackers biscuit or bread for breakfast. You have a lovely weekend.

hii!! i've tried making my pancakes...but they were not as fluffy as yours. i made my batter a night earlier, let it rest in room temp for an hour then put it into the fridge...is that why it didn't turn out to be fluffy?

and i pan fried it with a bit with oil.

please let me know where are my mistakes :(

Ice, i guess it was due to you keep it overnight and the rising agent in self raising flour no more active. Make the batter as soon as you want to make pancake .

Hi Sonia. I don't have enough self raising flour so I replaced the balance with 50g of cake flour and 1 tsp baking powder. I was amazed by how fluffy it has turned out, just like the hotcakes from Mc Donaldson and even better and fluffier. NOW I have run out of self raising flour. Can I know what is the substitute amount of cake flour and baking powder? 😄 this is the best pancake recipe I have tried so far! Thank you!

Nic, same amount of cake flour, baking powder i will suggest 3/4tsp or 1tsp
