Kek Gula Hangus 焦糖蛋糕 , by Philips All-In-One Pressure Cooker


Kek Gula Hangus, or some called as Kek Sarang semut, is a local cake that using caramelized sugar. I was very pleased with the result of this cake using Philips All-In-One pressure cooker Bake mode , nice burnt and deep colour, and smelly good of caramelized sugar.

Beautiful honeycomb crumb !

Even i have reduced the amount of condensed milk, still feel a bit sweet . Maybe i should reduce 50g sugar next time, but just afraid the colour will not so deep. If you try, let me know the result ya.

Kek Gula Hangus  焦糖蛋糕 , by Philips All-In-One Pressure Cooker

250g sugar
250ml hot water


200g condensed milk
125g salted butter
5 large eggs, A size
125g all purpose flour
2tsp baking soda

Method
1.      Heat sugar on medium heat in a pan till it melts and colour turns to golden brown (do not stir it too frequently to avoid  it's crystallized ).
2.      Pour hot water gradually into the caramelized sugar (be careful as it might spill) and the water to boil and stir till combined.
3.      Remove caramelized sugar from the heat and allow to cool.
4.      Beat the butter till light and frothy. Add in egg one at a time, and beat till combined.
5.      Pour in the condensed milk and caramelized sugar and stir to mix .
6.      Sift in the flour and baking soda, stir to mix then beat till combined.
7.      Open the lid of the Philips All-In-One Pressure Cooker and pour the batter into the inner pot.
8.      Close the lid back and turn the vent on the top of the lid towards ‘Bake’.
9.      Press ‘Bake’ and then ‘ Start’, bake for 45mins.
10.   When the panel lights up at ‘Keep Warm’, the cake is ready.
11.   Turn it out onto a cooling rack before cutting the cake.

Dear Sonia, I tried this recipe twice but there were no holes at all! Please advise. Do we need to preheat the pot?

Swee Choo Chan, no dont need to preheat the pot. Are you using Philips pressure cooker?

Hi Sonia, may i know if i can steam this cake in a normal wok if i don't have a pressure cooker ?
