Recipe adapted from xxx, sorry for not mentioning her name, as I couldn't find this recipe in her blog anymore, maybe she is currently selling cookies, thus she decided to delete this post.
Crispy Almond Flakes cookies (makes 15pcs)
2 egg whites
60g caster sugar
50g all purpose flour
100g Almond flakes
25g butter (melted)
1. Lightly beat egg white and sugar till sugar dissolved.
2. Add in flour, almond flakes and melted butter, combine well.
3. Spoon mixture on a non-stick baking sheet, and use the back of spoon to spread the mixture to round thin shape (make it as thin as possible).
4. Bake at pre-heated oven for 13-15mins at 160c or until golden brown.

Ai wei, you can reuse back the non-stick baking sheet again and again, using this non-stick baking sheet, very easy to remove the cookie from the sheet.

I love to review your blog to get some recipes. Currently I tried to bake Almond Flakes Cookie. Before baking, I did brush all over the baking sheet with melted butter.
Sadly, some batches are stick thoroughly to the baking sheet but some are not. May I know why this was happen and any solution for that? I try to remove from the sheet while it’s still hot. At first, it works. But after I tried for the next batch, its still stick to the sheet.

Hi, you may try to use parchment paper instead of normal grease proof paper. With parchment paper, you don't need to apply any butter, oil or grease. It's so convenient. The most common brand you can find in supermarkets is the "Glad Bake" non-stick baking and cooking paper. I love it very much.

Does anyone know how long these cookies keep? Do they last in an airtight container for more than 2 weeks?
Do I have to pre-bake the almond flakes before making these...? Thanks
