This is one of my favourite dim sum, a must have item for me but not for my family (kids don't know how to chew the bone and hubby doesn't like preserved black beans). Usually i was the one who finished off the whole plate (luckily just a small plate ^__^)..and i prefer those with slightly sweet taste..This recipe that i tried out, the taste is exactly like that one served in dim sum restaurant..
I also like to arrange pumpkin slices underneath, taste so yummy after pumpkin absorbed all yummy gravy from the seasoned spare ribs.
This is a must have ingredient, preserved salted black bean

Steamed spare ribs with preserved black beans
(recipe source: adapted from Flavours lifestyle food magazine with minor changes)
550g spare ribs
Marinade
2tbsp sugar
1tsp salt
1 and 1/2tsp chicken stock powder
Pepper
1tsp sesame oil
1tbsp chopped garlic
1 Chinese salted plum, crushed
3tbsp potato flour
1 red chili, julienned
Pumpkin, sliced (optional)
1tbsp preserved salted black beans, soak with water for 5mins
Method
1. Cut the spare ribs into small and bite sized cubes. Soak with 1/2tsp baking soda with some water for 1/2hour, wash it and drain (this is to tenderizing the meat)
2. Combine the marinade ingredients in a mixing bowl, toss ribs in the marinade.
3. Add in potato flour and toss to coat the ribs well.
4. Cover the bowl with cling film and set aside for 1 hour in the refrigerator.
5. Place pumpkin slices on a steaming plate, top with marinated spare ribs, preserved black beans and chili, steam over rapidly boiling water for 10mins. Serve hot.

This is one of my fav ways to eat pork ribs, but if I wanna eat the soft bone (yuen kuat) need to braise rather than steam, if not gigit until my teeth pain LOL.
You know what, most of the dishes that you cooked, has always been my favourite too! I like steamed pork ribs but funny I hardly cook this :-) As least now, it just gave me a second choice what to cook tonite.

There are lots of dishes I am the only one to like at home too. You are right to prepare treats only for yourself. These ribs sound fantastic! (I love spare ribs!).

Sem, yes, you are right, the sour plum that use to steam Teochew fish..The issue is Mar-Apr 2007, so long and old issue ho..i still keeping issue from 2001,hehehe.
Anna, you can get black beans from wet market (go to the stall selling all kind of dry foods like onion, garlic, ikan bilis& etc), I suppose Jusco and Tesco do have this too.
This is favorite too. Saw Ann posted last week n now ur turn. Both also looks so yummy. Use the pumpkin to absorb water sounds new to me. Must try one day.
My children love this and it's a must for them when we have dim-sum.

This is one of my favorite dim sum, I love it with chicken feet too! Have never tried it with pumpkin though, what a brilliant idea! Have to try it one day ~

Joy, yes, you can use Lean loin Meat but not minced meat.
