Desmond would like to present this very milky and lovely bread to you, hope you will like it..
This time I changed cold water to cold milk, so this bread is very milky and soft, my kids just love this bread.
Mini sausage au Lait bread
(printable recipe)
Ingredients:-
A)
500g High protein flour
60g caster sugar
½ tsp salt
B)
270g cold milk
40g egg white
C)
1 and ½ tsp yeast
D)
80g butter
Some sausages, chopped
Steps:-
1. Mix A, then add in B, combine well.
2. Add in C, continue knead.
3. Then add in D, knead till elastic. (The dough is quite sticky, don't tend to add more flour !!)
4. Rest for 60mins.
5. Slightly knead the dough again and rest for another 30mins.
6. Shape the dough and wrap in chopped sausages, rest for another 15mins.
7. Bake at pre-heated oven at 180c for 25mins.

Haha, I really cannot help smiling when I look at Desmond's pictures. I thought he was a girl at first! But the buns look super soft and fluffy. Great idea to use milk and it tends to make it even more moist and delicious.

ai wei, do try out this recipe, it still maintain soft after I keep till the next day. Personnaly i find a recipe with soft dough get softer bread, example like this one.

Yes, "lait" means milk in French. "Au" means literally "to/(in)to/at the _____." So, let's say ... "pain au lait" literally means "bread to the milk."

However you have a typo error and used "au laid" at some point. Laid means ugly in French which is certainly not the case of your beautiful buns :-).

Made this a couple of days ago using the bread machine (yes, I'm lazy and proud of it). Stuffed them with some cheese and breakfast links. Fantastic! My bread was a little dense, though. Next time I think I'll give them a little more rest/rise before baking.

Will the dry yeast be fine without some lukewarm water since the milk is cold? i tried something similar however my dry yeast did not dissolve into the dough and the dough did not rise much. Also im using a microwave over as i dont have an oven to bake it in.

Anonymous, ya, I have no problem with this recipe when the milk is cold, anyway, no problem if you want to active the yeast with 1tbsp of lukewarm, should be ok. May I know your name please...

You have mention 270g Milk and 40g Egg white if you could please tell me how many eggs will I need to get 40g of egg white and how much ml of milk will make 270g.

Mabel, 40g egg white is about 1-2 eggs, and you need to weight the egg white to get 40g. Same goes to milk, I am not sure what ml as I weight the milk instead. I will find out the ml if I make this again. Hope this help.
Hi Sonia I make this bread following your recipe and method but the skin of my bread a bit hard... I'm using Microwave Oven and I used hand to knead the dough. I dont know what is the problem... help..
