This morning i was so happy to find out this pink hokkaido cupcake liner is in stock (not many in stock actually, selling fast), and the new stock of blue hokkaido cupcake liners also arrived (you may check out in my kedai runcit page). Immediately use it to make this Strawberry Hokkaido cupcakes.
I use back the old recipe and simply replaced custard powder with fresh strawberry puree, wow, this strawberry cream is better than custard cream..tangy and sweet, nice!

Hi,
May I know how to make strawberry puree ? Sorry for asking silly qu ?
And one more thing, if I want to use normal flour to replace cake flour, what is the portion to get it right ?
Thanks & regards
Wendy
really love that picture of the inside of the cupcakes, so tempting looking at the cream!!
Wendy Teo, for strawberry puree, i just cut into small pieces first then use a hand blender to blend it. Or you can also blend it using normal blender. Please try not to replace cake flour with normal plain flour, this recipe need to use super fine flour to yield a lighter and fluffy cake.
They look awesome! Just came back from Camerons and got the bestest Strawberries from S'Corner - very plump, juicy and best of all sweet!
any idea if I can change the strawberry to raspberry instead? the quantity remain the same?
Though i don't fancy whipped cream, your strawberry whipped cream looks so yummy!
Hi Sonia,
this is another great recipe of yours! I have tried a few of your recipe and it never fails to surprise me:) Keep up the good work and share more recipes.

Hi Sonia, I baked this cake today. The cakes were very cottony soft and I loved them! But they did not crack open nicely on the top like yours. Also, my strawberry puree somehow could not mix with the whipped dairy cream at all so it tasted very grainy after I refrigerated the cakes. Can you advise what did I do wrong with the cream and how to achieve the same cracked look as your cakes? I would like to try it again because I super liked the soft cottony texture. Thanks!
teo ai li, ok, maybe you can fill batter in the cupcake a bit more and bake it longer. What I did for the cream, I chopped fresh strawberry till fine , then beat the whipping cream ( make sure you place a bowl of ice water underneath) till stiff, then combine the strawberry paste and cream together.
Hi Sonia, thanks for your reply! I only baked my cakes for about 12mins as they are turning brown and when I inserted the skewer it came out clean and dry. I blended the strawberry. Beat the whipped cream and then add in strawberry. Anyway, will try again. Thanks!
Hi Sonia, by strawberry puree do you mean Strawberry with sugar or just slicing strawberries?:O
Hi Sonia, thanks for your reply!
hello..can i ask u some question.
why my Hokkaido cupcake is not stock with the cupcake liners?
sorry...i mean **not stick with the cupcake liners.
when taken out from the oven it's nice. After few minutes, the cupcake is detach with the cupcake liners.
