I like spicy foods, when I first see this recipe, i immediate bookmarked and keep it to cook list. But when I see Jane so quickly tried this recipe and strongly recommended by her, i cook straight away on the same day.
This is the spicy lemongrass paste, and it could be stored in the fridge for up to 1 month. This morning I just use the balance lemongrass paste and saute with dried shrimps and serve with white meehoon, it was delicious !
I cooked more gravy since we served this chicken with steamed white rice.
Vietnamese Spicy Lemongrass Chicken 越式香茅鸡
(recipe source: adapted from Echo's kitchen)
Spicy lemongrass paste
5 Fresh Lemongrass(use only the white part)
25 Dried Red Chili(Reduce for lesser heat)
1 1/2 inch of ginger root (i replaced with blue ginger)
8 Cloves of garlic
1/2 cup of cooking oil (You can also use 1/3 cup for less oil version)
Method
Remove the outer part of lemongrass if it is dried or dirty, clean and slice the lemongrass, ground it together with all other ingredients mentioned into a paste.
It is OK if the paste is a little coarse
Spicy Lemongrass chicken
2 tbsp Spicy Lemongrass Paste
1-1.5 lb chicken pieces/chicken breast pieces(marinate with a pinch of black pepper powder and some salt)
1 tsp Meat Curry powder
1/2 onion, chopped (i use 1 big onion)
1 tbsp Soy sauce/Fish Sauce
1/2 tsp Salt
1/2 tsp Sugar/Palm Sugar
Method
Heat up a cooking pan, and turn the heat to medium, and cook the chicken pieces WITHOUT oil, cover it if needed, until the grease started release. (BUTIf using skinless chicken/breast, you will need to add 1 tsp of oil or so to grease the pan).
When the grease released is visible, stir in the chopped onion, and cook for another minute, now add 1 tsp of Curry powder, stir well, and add 2 tbps of Spicy Lemongrass Paste, stir for another minute, add about 1/2 cup of water, salt, soy sauce/fish sauce and sugar.
Bring it to boil and when the liquid reduced to the thickness of your liking, its done!

My note-the above is original recipe, anyway i have simplified it by using the homemade chili paste and mix with lemongrass and other ingredients, very quickly saute and spicy lemongrass paste is ready, save time and convenient.

Sonia, this looks very simple to make and definitely a dish that will please my Quaylo because you used two of his favorite ingredients which are chicken breast and lemon grass. He loves the fragrance and the flavor of lemon grass. When I make it, I will debone the chicken breast cos he does not like anything with bones unless it is rack of lamb or pork.
